These spicy Thai noodles are better than takeout. Inspired by a trip to Thailand I haven’t taken yet these noodles make you feel exotic yet nourished and satisfied.
Ingredients
- 7 oz/ 200g dried rice noodles
- 3 large garlic cloves, minced
- 2 Thai chillies, deseeded and finely chopped
- 1/2 onion, sliced
- 2-3 chicken thighs, cut into bite-sized pieces
- 2 tsp fish sauce
- 2 green onions, cut into pieces
- 1 cup Thai or Holy basil leaves
- 3 Tbs oyster sauce
- 3 Tbs soy sauce
- 2 tsp sugar or honey
- 1 Tbs water
Instructions
- Cook noodles per package directions
- Mix oyster sauce, soy sauce, sugar and water in a small bowl
- Heat wok or large skillet over high heat
- add a drizzle of sesame oil or spray with cooking spray. Add garlic and chili and cook for 10 seconds. Don’t inhale, the chili will make you cough!
- Add onion and cook for another minute
- Add chicken and fish sauce. Cook about 2 minutes.
- Add green onions, noodles, and sauce. Cook for 1 minute until the sauce reduces and coats the noodles.
- Remove from heat and immediately add basil. Toss until just wilted and serve immediately. Enjoy!
